The Peacock is more than just a place for exceptional coffee, cocktails, and community—it’s a deeply personal tribute. Founded by Thomas Kalmbach, a former West Sider who relocated to the Tri-Cities in 2021 during the height of the COVID-19 pandemic, The Peacock was born from a desire to reinvent himself and create something meaningful. That journey began with Peacock Coffee Roasting Co., a small-batch roastery built on curiosity, craft, and a belief that great coffee can bring people together. The name—and the spirit behind it—is a tribute to Thomas’s late mother, who lovingly collected peacock feathers throughout her life.
But as it so often does, that spark of reinvention soon ignited something bigger.
In October 2024, The Peacock opened its doors as a full café, bar, and gathering space—evolving from its roots as a coffee roastery into a vibrant destination for craft cocktails, creative food, and local connection. What started as a personal reinvention has become a celebration of flavor, hospitality, and the magic of sharing something special with your community.
